This was my favorite breakfast/brunch tea while in Tanzania, so I’ve brought the recipe home with me! It’s excellent companion is a hot muffin.

3 cups whole milk
1 cup water
1 tsp whole black peppercorns
9 whole cloves
4” cinnamon stick
1 tbsp whole cardamom pods (slightly open)
1 tbsp minced ginger
4 tbsp sugar (or to taste)
1-1/2 tspn loose black tea leaves in small tea ball

Put all spices (except cinnamon stick) into large spice ball and close. Drop spice ball and cinnamon stick into water and bring to boil. Boil gently for 12 minutes. Remove spices. Add milk and tea. Boil while stirring 2 minutes.

Serve with hot muffin or with Vitumbua (see recipes.)
